Health Benefits of Green Beans
Green beans contain antioxidants that protect the cells
against damage from free radicals in the body. These are the cause of serious
diseases and early aging. Green beans contain antibacterial and antifungal
properties. They contain vitamin A, C, K, niacin, riboflavin, thiamin,
pyridoxine, and folic acid, as well as calcium, zinc, magnesium, manganese,
iron, phosphorus, potassium and lutein.
Lutein helps with good vision. Vitamin K help to build strong
bones, protect the heart and helps with blood clotting. Green beans are low in
calories and low in cholesterol. Rich in fiber and prevent constipation. Potassium maintains cell and body fluid.
Green beans also contain serotonin, dopamine which helps to
regulate mood swings. Good to include in your diet.
Green
Beans and Sour Cream Recipe
Bake at
400’ for 20 minutes
Makes 6
Servings
1 medium
size onion minced
2 x 9
ounces frozen French cut green beans
cooked
1
teaspoon sugar
2 Tbls
butter
1 Tbls
flour
1 tsp
salt
½ tsp
pepper
1x8 oz
dairy sour cream
2 Tbsp
shredded Swiss cheese
2 Tbsp
chopped almonds
Mix onion
beans and sugar in a buttered casserole
Melt
butter in a saucepan until foamy, stir in flour.
Cook 1
minute
Add salt,
pepper and sour cream.
Heat but
do not boil.
Spoon
sauce over vegetables and toss lightly until thoroughly mixed.
Sprinkle
with cheese and almonds
Bake in a
hot oven 400’ for 15 to 20 minutes.
